String Sheet name changes

Can someone please explain to me how to change names? I've downloaded Jungle boy and Scorpio Sky Pofo's just to name a few whose names don't appear in game.

You can change the name in the .pofo with Data Editor. Check out the Data Editor Tutorials (especially the Name Settings section) for more information.
Make sure you have the Super String installed. It doesn't seem like the Super String comes with these names, so you'll have to edit the Super String with either WrestleMinus or a Hex Editor to replace existing Strings. Then you set the names in your .pofo to the name you've changed.
