[SOLVED] How do I edit the default/vanilla string?

So, I've been meaning to get back into using mods for a while now. I want to take it slowly, so I don't really want to mess around with Wrestleplus, Data Editor, Superstring, etc yet.

I also don't want to start adding superstars yet, which is why I've been replacing them instead. I want to edit their names, but I don't know how to edit the string simply by using HxD. Can anyone help me out?
