Is it possible to edit the match up graphics and nameplates?

Definitely!  The match up graphics are sets of .dds image files and the nameplates are either .dds files or .bk2 videos (since they animate).

The match-up files are located here: pac/menu/assets/wwe16_anime/match_up/

You can also check out LordJustice's arena mod (thread) - which uses new match up graphics.
